Ingredients: 2 cups rice (long grain or regular), 3 1/2 cups water, 3 tbsp vegetable oil, 1 tsp Beryani spice
2 1/2 cups cooked chicken – boiled or rotisserie
1 lb ground beef (meatballs)- 1/2 tsp black pepper, 1 tsp salt
4 medium/large potatoes- peeled and cubed small
3 medium onions sliced
12 ounce bag of frozen peas
Vegetable oil
Beryani spice, salt
Directions: Boil a whole medium sized chicken in salted water for about 45 minutes or until fully cooked. If you are short on time a rotisserie chicken can also be used. After chicken has cooled, pull meat to make it shredded then place in bowl and mix with 1 tsp of Beryani spice.
Prepare your rice by rinsing a few times until water runs clear in order to remove excess starch. Then soak in warm water for about 20 minutes.
**Multiple pans may be used or the same pans may be reused for sauteing items **
While rice is soaking, make meatballs by combining 1 lb ground beef with mixing 1/2 tsp black pepper and 1 tsp salt and then form into small meatballs. Once meatballs are rolled, heat 1-2 tbsp of oil in order to saute meatballs until golden brown. Set aside.
Heat 5 tbsp of oil for frying cubed potatoes after mixing with 1 tsp of Beryani and 1/2 tsp salt. Fry until golden brown and crispy. Set aside.
Heat another tbsp of oil to saute sliced onions until caramelized adding 1/2 tsp of Beryani while cooking. Set aside.
Heat 1 tbsp of oil to saute frozen peas until they become soft. Set aside.
After rice has soaked, dump out excess water, then heat up 3 tbsp of oil in a pot big enough to cook rice. When oil heats up cook rice for a few minutes before adding water. Also mix in 1 tsp of Beryani spice in rice water. Bring rice to a boil then lower heat to medium and cover for 10 minutes. Then mix rice and re-cover for another 5 minutes or until fully cooked.
In a large bowl, place half of the rice and other mixtures (onions, meatballs, peas, potatoes) and mix gently. Then add the second half and continue to mix gently. Ready to serve.
** If you want to have the dish set out for a nice presentation before serving you can mix rice with the peas, onions and chicken and then place on serving tray. Then add the potatoes and meatballs around the dish and serve.
**If you would like for this Chicken Beryani dish to have more of a kick and spicy then add more Beryani to each step depending on your preference.
** Can be easily turned into a vegetarian dish by just skipping the chicken
