Ingredients
- 1 tbsp vegetable oil – for frying
- 2 small pitas torn into pieces (avoid using store bought chips)
- 1 large cucumber – chopped small
- 5 roma tomatoes chopped or 3 cups halved grape tomatoes
- 1/2 red onion finely diced
- 3/4 cup chopped fresh mint (optional)
- 3/4 cup chopped parsley
- 1 romaine heart chopped, size depends on preference
- 2 tbsp extra virgin olive oil
- 1tbsp fresh lemon juice – more can be added depending on taste
- 5 green onions chopped – even the white bulbs
- salt and pepper to taste
- 1 tsp sumac ground, or to taste
- feta cheese
Directions
- Heat vegetable oil in pan on medium high heat and fry pita chips without crowding pan, then remove and blot with paper towel once they turn golden brown
- Combine all ingredients into bowl and then lightly toss salad with fried pita chips
- Sprinkle or grate feta cheese on top of salad
