Fattoush Salad

Ingredients

  • 1 tbsp vegetable oil – for frying
  • 2 small pitas torn into pieces (avoid using store bought chips)
  • 1 large cucumber – chopped small
  • 5 roma tomatoes chopped or 3 cups halved grape tomatoes
  • 1/2 red onion finely diced
  • 3/4 cup chopped fresh mint (optional)
  • 3/4 cup chopped parsley
  • 1 romaine heart chopped, size depends on preference
  • 2 tbsp extra virgin olive oil
  • 1tbsp fresh lemon juice – more can be added depending on taste
  • 5 green onions chopped – even the white bulbs
  • salt and pepper to taste
  • 1 tsp sumac ground, or to taste
  • feta cheese

Directions

  1. Heat vegetable oil in pan on medium high heat and fry pita chips without crowding pan, then remove and blot with paper towel once they turn golden brown
  2. Combine all ingredients into bowl and then lightly toss salad with fried pita chips
  3. Sprinkle or grate feta cheese on top of salad
